10 Macmillan Coffee Morning Recipes

At Millers we love cake and coffee and are excited to be hosting our very own coffee morning as part of Macmillan Cancer Supports World’s Biggest Coffee Morning campaign.  So as the Montrose team prepare for their own ‘bake off’, we’ve rounded up some of our favourite Macmillan Coffee Morning recipes.

We hope the team take our very big hint and create some of these delicious recipes for us on the 28th September.  But whether it’s a classic victoria sponge, cupcakes or a biscuit that is your own favourite, you can now find the perfect recipe to bake at home too.

#1  Mary Berry Lemon Drizzle Traybake

Traybakes are perfect for coffee mornings and it’s only right that we’d feature this classic from the Queen of Cakes.

#2 Graeme’s Golden Sultana Biscuits

Our Graeme’s favourites! They are quick to make, taste amazing and make your home smell divine!

Estimated time: 22 minutes

Difficulty: Easy

Ingredients :  

  • ½ cup butter
  • ½ cup sugar
  • 1 tablespoon golden syrup
  • 1 tablespoon milk
  • 1 teaspoon baking soda
  • ½ cup sultanas
  • 2 cups flour
  • ¼ teaspoon vanilla essence

Directions:

  1. Over low heat melt butter, along with sugar, golden syrup, milk, baking soda and sultanas
  2. Remove from heat and stir in flour and vanilla essence
  3. Use hands and roll into approximately 15 balls
  4. Place on a greased oven tray and flatten using hand or spatula ( I find about ½ cm thick is ideal)
  5. Bake in a preheated oven at 180℃ for approx 12 minutes until golden brown.

#3 Classic Victoria Sponge

It wouldn’t be a coffee and cake morning without the classic victoria sponge.  A firm family favourite, perfect that sponge and it could be a ‘bake-off’ winner!

#4 Shona’s Chocolate Brownies

Squidgy and super moreish, I’d recommend baking two batches as these will go quick (or you can keep a batch at home for the family who won’t be able to resist).

Estimated time: 1 hour.

Difficulty : Easy

Ingredients

  • 275g unsalted butter (slightly softened)
  • 300g caster sugar
  • 75g dark brown sugar
  • 4 eggs
  • 75g cocoa powder
  • 100g self raising flour
  • 100g dark chocolate chips

Instructions:

  1. Preheat oven to 160℃ and line baking tin with baking paper (30cm x 23cm)
  2. Combine butter and sugars then add the eggs.
  3. Mix in the cocoa powder and self raising flour and finish by stirring in the chocolate chips. The mixture will be very thick.
  4. Spoon it into the baking dish, smooth it out and bake for 40-45 minutes. The cake should be set and a skewer should come out clean but you also don’t want to over bake because otherwise the brownies won’t be squidgy.
  5. Leave to cool in the tin (If appropriately squidgy it will collapse a little) before cutting into 24 squares and serving

#5 Best Vegan Chocolate Cake

Rich and fluffy but quick and easy to make, your guests will be surprised to learn this is a vegan recipe.

#6 Rainbow Cake

If you are looking to make a statement and show off your layering skills, this is the recipe for you.    Fun and colourful, this popular cake is topped with a delicious cream frosting too!

#7 Italian-style Bakewell Tart

Jamie knows a thing or too when it comes to baking and this recipe makes the most of plums which are currently in season.

With a limoncello icing, make sure you grab a slice before they go quick!

Estimated time – 1 hour plus cooling time

Difficulty – Not too tricky

#8 French Squares/Jammy Dodgers

This step by step recipe will ensure that you can recreate one of the nation’s favourite biscuits in under 40 minutes.
